The Lechin olive tree from Seville, is one of the most widespread olive varieties in Andalusia, mainly in Seville, Córdoba and Cádiz, having grown to more than 100,000 hectares of crops, thanks to its high resistance to drought and adaptation to limestone soils. Lechin Olives are medium to large olives that ripen to black that are grown for the pale yellow oil that they yield. The oil yield is about 18 to 25%, depending on the variety.

Lechin is known for its complex aroma of green olives and dried fruits with hints of apricot with a well-balanced flavor of ripe fruits, such as apple, with a delicate spicy finish. This is an excellent oil particularly for salted fish, anchovies, tomato salads, white meats, poultry and desserts. The Lechin variety of Olive Tree is one of the oldest, more 'rustic' in appearance and one of the toughest cultivars. It can tolerate temperatures down to -15 degrees, is very wind and drought resistant, whilst also tolerating poor quality soils.
